Kick Ass Salsa

MAKES ABOUT 4 CUPS

STAND: 1 HOUR


  • 3 large tomatoes
  • 1 large Vidalia onion
  • 1/4 cup lime juice freshly squeezed
  • 1/2 bunch cilantro
  • 1/4 jalapeno pepper
  • 2 teaspoons kosher salt



CUT tomatoes in half and squeeze out seeds. Dice tomatoes; add to colander and sprinkle with salt. Let
tomatoes stand for one hour, this lets all the juices drain so you will not have tomato soup. While tomatoes
setting, chop onion, cilantro, and jalapeno. The combine all ingredients in a large bowl. Add more salt and
jalapeno pepper to taste.
